OUR HISTORY
We are proud to introduce "LET-US NATURALLY CRAFTED SALADS," a new venture inspired by Chef Lightfoot's commitment to understanding indigenous crops from the motherland. Through the Specialty Crop program at the University of the District of Columbia, we emphasize urban agriculture, nutrition, and food access and security enhancement. Our mission is to provide health-focused salads that honor local produce while promoting sustainability and urban resilience. We invite you to join us in celebrating the rich flavors of nature and supporting innovative practices for a better future.
Our salad ingredients are sourced from local farmers and curated through OurSpaceWorld (OSW). Recognizing that food, environment, and lifestyle were root causes of illnesses treated in the community – particularly for clients who identified BIPOC, OurSpaceWorld shifted focus in late 2017, taking a 2-year hiatus period for exploration, research, and training on farming and building skills (encompassing the Washington DC Neighborhood Farm Initiative’s Mamie D. Lee garden, the University of the District of Columbia’s College of Agriculture Urban Sustainability and Environmental Sciences (CAUSES), Ward 5 aquaponic demonstration project, the ECO City Farms Beginning Farmer Training Program, and the Earthship Biotecture Academy).
In 2018, OSW started farming, gardening initiatives, and building projects for community members who wanted to work in these trades. Since early 2019, OSW has started several satellite community farms/gardens and provided several hundred hours of hands-on education and consulting around small-scale farming, ecological building, and cooperatives. So, building a partnership with OSW was a no-brainer because we know we will deliver freshly harvested lettuces, tomatoes, rice, honey, and other locally grown ingredients that will make us a true farm-to-table-to-customer operation.
LET-US aims to be a favorite maker of salads and healthy fresh foods for all urban communities.
